Chicken Salad with Grapes & Papayas































Healthy Chicken Salad recipe for a girls' potluck lunch.


What to bring?! The hostess was making the soup, salad by Bets and Kristin was bringing cake. So I've chosen to bring Chicken salad with grapes and offered it up with papayas.

Did you know that papaya plant is actually an overgrown herb? I didn't know that either! The best part of papaya is that it's really good for your digestion. It is a natural digestive aid that helps break down protein and cleanses the digestive tracks. PLUS it is packed with nuitrition. It is full of folate, viatmin A, E, carotenoids lutein & it has 33% more vitamin C and 50% more potassium than oranges with fewer calories. Some might call it a "nuitritional masterpeice".

In this recipe, I avoid the mayonnaise and replace it with olive oil and yogurt or sour cream. I got the idea of serving up the chicken salad with papayas from another friend, Andrea, and the salty, savory taste paired so well with the sweet papayas! Plus it was filling but healthy for you. Still there are those who like to have it as a sandwich too. So I brought some thin whole wheat breads... but most of the ladies preferred it with papayas.

Ingredients:
3 stalks of celery finely chopped
1/4 cup red onions finely chopped
1/2 cup chopped cilantro (can replace with basil or taragon)
handful of baby spinach
20 red grapes cut in quarters
10 medium sized chicken breasts (I used frozen breasts)
1/2 cup sour cream or plain Greek yogurt
1/2 cup olive oil (I used spanish olive oil for flavor)
salt/pepper/garlic powder

Directions:
Finely chop celery, red onions & cilantro and put in a bowl.
Cut chicken breasts into 1/2 inch cubes and put in boiling water until cooked.
In a separate bowl, add chicken, olive oil and season chicken with salt, pepper & garlic powder and mix. (be generous with seasoning here)
Add the rest of the ingredients to the chicken and mix it well with 1/2 cup of sour cream or yogurt.

Place a handful of baby spinach in a pretty bowl. Place the chicken salad on top.
Then cut & peel the papayas into quarter slices and place them along the edge.

You can serve it with rolls so that your guests can make sandwiches out of them or just eat them with papayas as a salad. Enjoy!
